Vegan Pesto with Zucchini Noodles

Recipe from Bruin Woods Plant Based Food Demo. I can’t remember the name of the teacher who wrote it (sorry).

Vegan Pesto with Zucchini Noodles

Ingredients

  • 5 cups fresh basil, tightly packed
  • 1 cup raw pine nuts
  • 1.5 cups extra-virgin olive oil
  • 6 tablespoons fresh lime juice
  • 2 tablespoons fresh garlic (I use 1 clove)
  • 4 teaspoons Coconut Aminos, Braggs Liquid Aminos or soy sauce
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2-3 whole zucchini, spiralized

Instructions

Place all ingredients in a food processor or blender and mix until smooth.

Serve over raw zucchini spirals.
