1 cup old fashioned rolled oats or steel cut oats
1 3/4 cups water or milk
1 egg, lightly beaten
1 tablespoon maple syrup
Pinch of salt
1/4 teaspoon cinnamon
1/2 teaspoon vanilla extract
1 tablespoon butter (optional)
Chopped dates, walnuts, brown sugar, for serving
- Add oats and the amount of water or milk directed on package (usually about 1 3/4 cup milk or water). Bring to a simmer.
- Meanwhile, whisk an egg in a small bowl, then temper the egg using the heated oatmeal mixture.
- Add the egg to the oatmeal and continue to cook as long as package directions indicate.
- Once the oatmeal is done, remove from heat, and stir in vanilla and butter.
For an extra creamy consistency, especially when using steel cut oats, run an immersion blender around the pot.
Top with brown sugar, a chopped date or raisins, toasted walnuts, brown sugar, and a drizzle of cold milk.
