Kodiak Protein Banana Muffins

An extremely moist banana muffin made with Kodiak Power Cakes mix and Fage Greek yogurt.

Ingredients

  • 2 large bananas, mashed
  • 1/2 cup (120g) 1% milk
  • 1/2 cup (113g) Oikos Triple Zero Vanilla Greek Yogurt
  • 1/4 cup packed brown sugar
  • 1/4 cup (56g) olive or avocado oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups (252g) Kodiak Power Cakes Buttermilk Mix
  • 1 teaspoon cinnamon
  • 1.5 teaspoons baking powder

Instructions

Preheat oven to 350-F. Line a muffin pan with cupcake liners.

In a large bowl, smash the bananas. Add the rest of the wet ingredients and mix. Add the dry ingredients and mix just until incorporated.

Divide batter evenly among the 12 muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs attached).

Cool for 5 minutes then transfer to cooling rack to finish cooling.
