
Preheat oven to 350-F. Line a muffin pan with cupcake liners. In a large bowl, mix together all ingredients. Divide batter evenly among the 12 muffin cups. Bake for 18-23 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs attached). Cool for 5 minutes then transfer to cooling rack to finish cooling.
