Adapted from Nutrition Action Magazine
- 1 tablespoon extra-virgin olive oil
- 1 lb cremini or white button mushrooms, chopped
- 1½ tablespoons reduced-sodium soy sauce or tamari sauce
- 1 bunch scallions, chopped
- 2 cups cooked farro
- 3 tablespoons cream cheese
- Heat olive oil in a large pot over medium heat.
- Add mushrooms and cook until browned, 5-7 minutes.
- Add reduced-sodium soy sauce, scallions and cooked farro.
- Remove from heat and add cream cheese, stirring to melt and combine.
