Creamy Mushroom Farro

  • 1 tablespoon extra-virgin olive oil
  • 1 lb cremini or white button mushrooms, chopped
  • 1½ tablespoons reduced-sodium soy sauce or tamari sauce
  • 1 bunch scallions, chopped
  • 2 cups cooked farro
  • 3 tablespoons cream cheese

  • Heat olive oil in a large pot over medium heat.
  • Add mushrooms and cook until browned, 5-7 minutes.
  • Add reduced-sodium soy sauce, scallions and cooked farro.
  • Remove from heat and add cream cheese, stirring to melt and combine.
