Zucchini Muffins


2 large eggs

1/3 cup oil

1/3 cup granulated sugar

1/3 cup brown sugar

1 1/2 teaspoons vanilla

2 teaspoons pumpin pie spice

2 cups grated zucchini, squeezed first then packed

3/4 cups whole wheat pastry flour

3/4 cup all purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

Cream cheese frosting (optional)


Set oven rack to middle position and heat to 400-F. Grease a muffin tin or use muffin liners.

In a large bowl, mix together the first 6 ingredients.

Fold in the zucchini.

Place a sieve over the bowl and sift in the flour, baking powder, and baking soda.

Pour the batter into muffin tins all the way to the top.

Bake approximately 22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
