There is no need to peel Kabocha or Delicata squash.

Roasted Kabocha or Delicata Squash

Ingredients

  • Kabocha or Delicate Squash
  • 1-2 tablespoons olive oil
  • 1/2 teaspoon salt
  • freshly cracked black pepper

Instructions

Preheat oven to 400-F

Wash squash and cut down the middle. Scrape out the the seeds.

Cut into the size you like – either small wedges or slices - about 1/4 inch thick.

Toss with 1-2 tablespoons olive oil or spray.

Sprinkle with salt and pepper

Roast approximately 25-30 minutes or until fork tender and browned in spots.
