Ingredients
- 2 pounds broccoli or cauliflower florets
- 2-3 tablespoons olive oil
- 3/4 teaspoon kosher salt
- Preheat oven to 450-F.
- Roast until deeply caramelized, about 25 to 30 minutes, flipping after 15 minutes. Transfer to a serving platter and squeeze the juice of ½ lime and sprinkle with chopped cilantro and flaky sea salt. Serve.

- Broccolini: 400 degrees for 10-15 minutes. Add small slices of aged cheddar on each one and put back in the oven until the cheese melts.
- Carrots: 400 degrees for 30 minutes.
- Cauliflower 350 degrees for 30 minutes. Remove from oven, sprinkle with gruyere and parmesan, and roast for 2 more minutes.
- Kale: 350 degrees for 25 minutes.
