Simple Roasted Broccoli & Cauliflower

Ingredients

  • 2 pounds broccoli or cauliflower florets
  • 2-3 tablespoons olive oil
  • 3/4 teaspoon kosher salt

  • Preheat oven to 450-F.
  • Roast until deeply caramelized, about 25 to 30 minutes, flipping after 15 minutes. Transfer to a serving platter and squeeze the juice of ½ lime and sprinkle with chopped cilantro and flaky sea salt. Serve.

  • Broccolini: 400 degrees for 10-15 minutes. Add small slices of aged cheddar on each one and put back in the oven until the cheese melts.
  • Carrots: 400 degrees for 30 minutes.
  • Cauliflower 350 degrees for 30 minutes. Remove from oven, sprinkle with gruyere and parmesan, and roast for 2 more minutes.
  • Kale: 350 degrees for 25 minutes.
