Lebanese Potato Salad



Potato Salad with Lemon & Parsley

Ingredients

  • 4 lbs russet potatoes
  • 1 bunch green onions, finely chopped
  • 1 bunch Italian parsley, finely chopped
  • 1/3 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper

Instructions

Cut potatoes in half crosswise and boil until tender when pierced with a knife. Cut into bite sized cubes.

Place potatoes in a large bowl.

Add green onions, parsley, lemon juice, olive oil, and salt.
