Hunter’s Banana Bread (egg/dairy free)

Ingredients

  • 4 very ripe bananas, mashed
  • ⅓ cup neutral oil (avocado, canola, or melted coconut oil)
  • ¾ cup brown sugar (or white sugar)
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ teasoon salt
  • 1 tsp cinnamon (optional)
  • 1/4 cup any kind of milk (if needed)
  • ½ cup chopped walnuts or pecans

Instructions

Set an oven rack into the center position. Preheat oven to 350°F (175°C). Grease or line a loaf pan.

Mash bananas in a large bowl until smooth.

Add wet ingredients: oil, sugar, milk, and vanilla

Add dry ingredients: flour, baking soda, salt, and cinnamon

Gently fold until just combined (don’t overmix).

If the mixture seems very thick, add up to a 1/4 cup milk.

Fold in nuts.

Pour into pan and bake 50-60 minutes (at the 50-minute mark, insert a toothpick or knife. If it comes out with a few moist crumbs, it's ready. If it streaks wet batter, give it 5 more minutes and check again.

Allow it to cool in the pan for 10 minutes then transfer to a wire rack to cool for at least 30 more minutes.
