Adapted from Minimalist Baker
- 1/3 cup pecans (pistachios and sliced almonds work well too)
- 7 ounces baby arugula
- 1/2 medium apple, thinly sliced
- 1/4 red onion or whole shallot, thinly sliced
- 1/4 cup shaved Parmesan or Pecorino Romano
- DRESSING
- 3 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly cracked black pepper
- 4 tablespoons olive oil
- Mix all ingredients and toss with dressing.
