- 2 cups/200g Kodiak Power Cake mix
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1 cup/120g grated zucchini, unsqueezed (use box grater)
- 1/2 cup/115 grams unsweetened applesauce
- 1/2 cup/115g plain nonfat greek yogurt
- 2 large eggs
- 1.5 tablespoons/21 grams olive oil
- 1 teaspoon vanilla extract
- Pre-heat oven to 350-F. Line a muffin pan with cupcake liners.
- In a large bowl, mix together Kodiak mix, cinnamon, and baking powder.
- Add zucchini and stir to coat.
- Make a well in the center of the bowl and add the rest of the ingredients; mix.
- Gently mix everything together until just combined.
- Divide batter evenly among the 12 muffin cups.
- Bake for 15 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs attached).
- Cool for 5 minutes then transfer to cooling rack to finish cooling.
