Tasty Oat Bran Muffins

Ingredients

  • 3/4 cup whole wheat pastry flour
  • 3/4 cup Bob's Red Mill Oat Bran Cereal
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup mashed bananas (I prefer 1/2 cup - approximately 1 small banana)
  • 1/2 cup plain yogurt
  • 1 egg
  • 2 tablespoons oil (I prefer 1/3 cup oil)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup shredded carrot, hand grated (approximately 1 medium carrot)
  • 1/2 cup chopped dates (about 5 medjool dates)
  • 1/2 cup chopped walnuts

Instructions

Pre-heat oven to 375-F. Lightly grease a muffin tin or use liners.

In a medium bowl, mix dry ingredients.

In a separate bowl, mix wet ingredients.

Add dry mixture to wet and stir until just moistened.

Fold in carrot, dates, and walnuts.

Bake for 15 minutes, or until a toothpick inserted into the center comes out clean (or with a few crumbs attached).
