Banana Oat Pancakes (Gluten Free)

Quick Banana Oat Pancakes (GF)

Ingredients

  • 1 ripe banana
  • 2 eggs
  • 1/4 cup oats
  • Pinch of salt
  • Pinch of pumpkin pie spice
  • Optional add-ins: 1-2 tablespoons nut butter, 1/4 cup chocolate chips, 1 tablespoon flax meal, squeeze of lemon juice, 1 tablespoon honey or maple syrup
  • Butter, for cooking

Instructions

Mash the banana with a fork.

Whisk in the eggs, oats, salt, and cinnamon until smooth.

Stir in optional add-ins.

Cut a tablespoon of butter into 4 parts. Heat 1/4 of the butter onto a skillet over medium heat.

Spoon 1/4 cup batter onto pan (drop in a few chocolate chips at this point); cook for about a minute or two, until bottom is golden brown.

Flip and cook another minute until golden brown on bottom.
