- 1 banana, mashed
- 2 tablespoons chia seeds
- 1 scoop unflavored whey protein powder
- 2 large eggs
- 1/4 cup maple syrup
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 3 cups old fashioned oats (I use One Degree Sprouted Oats)
- 1 3/4 cup milk
- 4 tablespoons butter
- 1/2 cup fresh blueberries (optional)
- Add all ingredients, except blueberries, to a bowl and mix well. Fold in blueberries.
- Pour into a greased 1 to 1.5 quart baking dish.
- Refrigerate overnight, covered.
- The next morning, pre-heat oven to 350-F. Bake, uncovered for 35 minutes, or until set in the middle.
- Serve hot or cold.
