Adapted from Cook’s Illustrated

No Cook Pizza Sauce

A quick, fresh pizza sauce.


  • 1 (28-oz) can whole peeled tomatoes, drained (I like Muir Glen & S&M brands)
  • 1 tablespoon extra-virgin olive oil
  • 3 anchovy fillets, rinsed and patted dry (I use 1/2 tsp anchovy paste)
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano (I prefer 1/2 tsp)
  • ½ teaspoon sugar
  • ¼ teaspoon pepper
  • ⅛ teaspoon red pepper flakes



Drain the tomatoes well and place in a food processor. Add all ingredients and mix until combined.
