	 Slice the zucchini into 1/8 inch rounds; stack up about 4 at at time and then slice into sticks (see images in original recipe, linked above) Heat a large skillet over medium-high; add the oil and butter. Add the almonds and red pepper flakes; cook, stirring, until the almonds are golden-brown, approximately 1-2 minutes.  Add zucchini, tossing, until it just begins to glisten, about 1 minute.  Season well with salt and pepper. Remove from heat and add cheese.Matchstick Zucchini Saute
