Ingredients
- 1 (28 oz) cans whole peeled tomatoes, drained
- Big handful of cilantro leaves
- 1/4 of a red onion
- 1 small clove garlic, minced
- 3 jalapeños, seeds removed for mild level of spice (optional)
- 2 spoonfuls from a can of diced green chilies
- Juice of 1/2 lime or lemon
- 1/4 teaspoon cumin
- 1/2 teaspoon Kosher salt
- Freshly cracked black pepper
- 1-2 scallions (white and green parts), finely chopped (optional)
Instructions

Put all the ingredients except for the scallions into a food processor and pulse until well blended.

Taste and add salt as needed.

Pour into a serving bowl and stir in chopped scallions.
