Ethiopian Cabbage & Potatoes

This is a great recipe for an easy and nutritious vegetarian dish. The only thing I would change in the recipe is to cook it over low heat (not medium-low), and scrape the bottom of the pot occasionally. If it does stick, just add a little water and scrape it with a wooden spoon. Also, I used about half the oil it calls for and didn’t miss it.
