Creamy Orzo with Shrimp & Spinach (great macros)

• 1 cup orzo

• 2 cups chicken broth (I like bone broth)

¼ cup cream (I used 25g)

• 1–1½ cups frozen shrimp (12oz frozen Trader Joe’s shrimp)

• 1 cup spinach (2 handfuls frozen baby spinach)

• 1 small shallot and/or 2 cloves garlic

• 1 tbsp olive oil (I used 5g)

• 1 tbsp butter (I used 10g)

1/4 cup grated Parmesan

• Salt & pepper to taste

Instructions

1. Start the orzo

• Heat olive oil + butter in a pan.

• Sauté shallot/garlic 1 minute.

• Add 1 cup orzo and toast 1 minute.

2. Add broth

• Pour in 2 cups chicken broth.

• Simmer 7–8 minutes, stirring occasionally.

3. Add frozen shrimp

• Stir the frozen shrimp directly into the orzo.

• Cook 3–4 minutes until they turn pink.

4. Finish

• Stir in:

¼ cup cream

spinach

• Cook 1–2 minutes until spinach wilts.
