Kodiak Protein Banana Muffins

Adapted from Power Cakes Muffins recipe on the box

  • 2 cups (252g) Kodiak Power Cakes Buttermilk Mix
  • 1/2 cup (120g) 1% milk
  • 1/2 cup Oikos Triple Zero Vanilla Greek Yogurt
  • 2 lagre bananas, mashed
  • 1/4 cup (180g) brown sugar
  • 1/4 cup (56g) olive or avocado oil
  • 1 egg
  1. Preheat oven to 350-F. Line a muffin pan with cupcake liners.
  2. In a large bowl, mix together all ingredients.
  3. Divide batter evenly among the 12 muffin cups. 
  4. Bake for 18-23 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs attached). 
  5. Cool for 5 minutes then transfer to cooling rack to finish cooling.
