Zucchini Kodiak Muffins (low-fat)

  • 2 cups/200g Kodiak Power Cake mix
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 cup/120g grated zucchini, unsqueezed (use box grater)
  • 1/2 cup/115 grams unsweetened applesauce
  • 1/2 cup/115g plain nonfat greek yogurt
  • 2 large eggs
  • 1.5 tablespoons/21 grams olive oil
  • 1 teaspoon vanilla extract

  1. Pre-heat oven to 350-F. Line a muffin pan with cupcake liners.
  2. In a large bowl, mix together Kodiak mix, cinnamon, and baking powder.
  3. Add zucchini and stir to coat.
  4. Make a well in the center of the bowl and add the rest of the ingredients; mix.
  5. Gently mix everything together until just combined.
  6. Divide batter evenly among the 12 muffin cups.
  7. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs attached).
  8. Cool for 5 minutes then transfer to cooling rack to finish cooling.
