Overnight Breakfast Oat Cake

  • 1 banana, mashed
  • 2 tablespoons chia seeds
  • 1 scoop unflavored whey protein powder
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 3 cups old fashioned oats (I use One Degree Sprouted Oats)
  • 1 3/4 cup milk
  • 4 tablespoons butter
  • 1/2 cup fresh blueberries (optional)

  1. Add all ingredients, except blueberries, to a bowl and mix well. Fold in blueberries.
  2. Pour into a greased 1 to 1.5 quart baking dish.
  3. Refrigerate overnight, covered.
  4. The next morning, pre-heat oven to 350-F. Bake, uncovered for 35 minutes, or until set in the middle.
  5. Serve hot or cold.
