Favorite Turkey Meatloaf

Ingredients

  • 2 tablespoons butter
  • 1 cup onion, minced
  • 1 medium/large clove garlic, minced
  • 1/4 cup rolled oats
  • 1/4 cup breadcrumbs, oats, or Ritz style buttery round crackers, crushed (about 6 crackers)
  • 1 egg (or 1 tbsp flaxseed meal mixed with 3 tbsp warm water/sit for 5 minutes)
  • ¼ cup ketchup, more for baking
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 lb lean ground turkey

Instructions

Pre-heat oven to 350-F. Grease an 8x4 inch loaf pan.

Melt butter in a small skillet over medium heat. Add onion and garlic; cook 7 minutes, stirring occasionally, until onions are completely softened. Set aside to cool.

In a mixing bowl, add oats and crackers/breadcrumbs, egg (or flax), ketchup, Worcestershire sauce, salt, and pepper; mix well.

Add turkey to the bowl and mix well with your hands.

Place into loaf pan or shape into a loaf on a sheet pan.

Coat a thin layer of ketchup over the top.

Bake about 45 minutes, or until the internal temperature is 160-165-F.

Allow to cool 5 minutes before slicing.
