Sweet Potato Waffles (GF)

  • 1/2 cup (129g) mashed cooked sweet potato (from about 1 sweet potato)
  • 1/2 cup (119g) low fat cottage cheese
  • 2 large eggs
  • 1 tablespoon pure maple syrup (I skip this)
  • 1 teaspoon vanilla extract
  • 1 cup old fashioned rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt

  1. Preheat waffle iron.
  2. Place all ingredients in a high powered blender and blend until batter is smooth (batter will be thick).
  3. Spray waffle iron with nonstick cooking spray and cook about 2-3 minutes.
  4. Makes 2 large waffles.
  5. Allow to cool and spread with peanut butter and Nutella.
