Sweet Potato Waffles (GF)

  • 1/2 cup (129g) mashed cooked sweet potato (from about 1 sweet potato)
  • Scant 1/2 cup (100g) low fat cottage cheese
  • 2 large eggs
  • 1 tablespoon avocado or olive oil
  • 1 tablespoon butter
  • 1 tablespoon maple syrup or sugar
  • 1 teaspoon vanilla extract
  • 1 cup old fashioned rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon powdered psyllium husk (optional)
  • 1/8 teaspoon salt


Recipe yields about 2-3 waffles.

  1. Preheat waffle iron.
  2. Place all ingredients in a high powered blender and blend until batter is smooth (batter will be thick).
  3. Brush or spray the waffle iron with oil.
  4. Pour batter and cook about 2-3 minutes, or until steam starts to subside and waffles are golden.
  5. Allow to cool and spread with peanut butter and Nutella.
