- 1/2 cup (129g) mashed cooked sweet potato (from about 1 sweet potato)
- Scant 1/2 cup (100g) low fat cottage cheese
- 2 large eggs
- 1 tablespoon avocado or olive oil
- 1 tablespoon butter
- 1 tablespoon maple syrup or sugar
- 1 teaspoon vanilla extract
- 1 cup old fashioned rolled oats
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 3/4 teaspoon powdered psyllium husk (optional)
- 1/8 teaspoon salt
Recipe yields about 2-3 waffles.
- Preheat waffle iron.
- Place all ingredients in a high powered blender and blend until batter is smooth (batter will be thick).
- Brush or spray the waffle iron with oil.
- Pour batter and cook about 2-3 minutes, or until steam starts to subside and waffles are golden.
- Allow to cool and spread with peanut butter and Nutella.
