In a large salad bowl, combine the kale, cabbage, mango, bell pepper, scallions, chile, peanuts, cilantro and mint. For the dressing, whisk together all ingredients. You will probably not use all the dressing, Add 1/2 the dressing to the slaw and toss to combine. Let it sit for about 20 minutes. It tastes much better after sitting for a while and allowing the tough greens to wilt down a bit. Then, toss again and add more dressing if needed.Spicy Kale Mango Slaw
