Simple Chocolate Pudding


  • 1/3 cup *granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 4 tablespoons cornstarch (or use egg yolks: 2 egg yolk is equivalent to 1 tablespoon of cornstarch)
  • 1/4 teaspoon kosher salt
  • 3 cups milk (I use 2%)
  • 1 teaspoon vanilla

*To lower sugar content, reduce sugar and cocoa powder to 1/4 cup each. The rest of the ingredients remain the same.


  1. Mix together sugar, cocoa powder, cornstarch, and salt. Place in a saucepan.
  2. Whisk in the milk, a little at a time, until it is well incorporated.
  3. Mix in any yolks, if using.
  4. Turn on the heat to medium; cook, stirring often, until the mixture reaches a boil; remove from heat.
  5. Stir in vanilla.
  6. Serve warm or allow to cool.
  7. Refrigerate to cool completely.

  • 4 tablespoons cornstarch (or use egg yolks: 1 egg yolk replaces 1/2 tablespoon cornstarch)
  • 1/4 teaspoon kosher salt
  • 3 cups milk (I use 2%)
  • 1 teaspoon vanilla

Instructions

Off heat, in a saucepan, whisk together dry ingredients.

Turn on the heat and slowly whisk in the milk.

Cook, stirring often, until it reaches a boil; remove from heat.

Stir in vanilla.

Serve warm or allow to cool.

Refrigerate to cool completely.
