- 1/3 cup sugar
- 1/4 cup cornstarch
- 2 tablespoons cocoa powder
- 1/4 teaspoon salt
- 3 cups 2% or whole milk 
- 6 ounces chopped bittersweet chocolate
- 3 tablespoons butter
- 2 teaspoons vanilla extract
- 1 pie crust, pre-baked (can use Oreo or graham cracker crust)
- Topping:
- 1 cup heavy cream
- 1 tablespoon confectioners sugar
- 1/8 teaspoon cream of tartar 
 
- Whisk first 4 ingredients in a cold pan.
- Add milk and whisk well.
- Turn on the heat to medium.
- Whisk often for about 8-10 minutes until it starts to boil. Allow it to boil gently for a few seconds and remove from heat.
- Add chopped chocolate, butter and vanilla and stir well.
- Pour into prepared pie shell and cover with greased parchment paper until it is cool enough to put in refrigerator.
- Refrigerate for about 2-3 hours and top with whipped cream.
