Quinoa Banana Muffins (GF)

Quinoa Banana Muffins

Serves: 12 muffins

Delicious, nutritious, gluten-free muffins.


  • 1 cup quinoa (blended into flour or store-bought quinoa flour)
  • 1/4 cup flax meal
  • 2 large eggs
  • 3 bananas, overripe and mashed
  • 2 tablespoons peanut butter (optional)
  • 1 teaspoon vanilla extract
  • 1/3 cup oil
  • 1/4 cup brown sugar
  • 1 1/4 teaspoon baking powder
  • ¼ teaspoon salt
  • 1/2 cup nuts, chopped



Preheat oven to 400-F. Grease a muffin tin or use paper liners.


Place quinoa in a high speed blender until it resembles flour (or use store-bought quinoa flour).


Pour into a bowl and add the rest of the ingredients, except for a few nuts to sprinkle on top. Mix well to combine.


Pour batter all way to the top of the muffin well.


Bake for 18 minutes, or until a knife inserted into the center comes out clean, or with a few crumbs attached.


Cool in the pan for about 5 minutes and then remove and allow to cool on a rack.
