Delicious, nutritious, gluten-free muffins. Preheat oven to 400-F. Grease a muffin tin or use paper liners. Place quinoa in a high speed blender until it resembles flour (or use store-bought quinoa flour). Pour into a bowl and add the rest of the ingredients, except for a few nuts to sprinkle on top. Mix well to combine. Pour batter all way to the top of the muffin well. Bake for 18 minutes, or until a knife inserted into the center comes out clean, or with a few crumbs attached. Cool in the pan for about 5 minutes and then remove and allow to cool on a rack. Quinoa Banana Muffins
