Peanut Butter Oatmeal Cookies

Ingredients

  • 1/2 cup butter, at room temperature (Earth Balance works well too)
  • 1 cup brown sugar
  • 1 large egg
  • 1 1/2 teaspoon vanilla extract
  • 1/2 tsp baking soda
  • 1 pinch kosher salt
  • 1/2 cup smooth peanut butter
  • 1 cup old fashioned oats
  • 1 cup all purpose flour

Preheat the oven to 350-F. Line a baking sheet with parchment paper.

Important step! Mix the butter and sugar together until light and fluffy (medium speed 3-4 in a stand mixer for 2-3 minutes).

Add in the egg, vanilla, baking soda, and salt; mix until well combined. Be sure to scrape down the sides of the bowl.

Add the peanut butter and oats; mix well.

Add the flour and mix until just combined.

Add 12 dough balls to the baking sheet (cook in 2 batches).

Bake for 12 minutes for a chewy center 13 - 14 minutes. Once the cookies are removed from the oven, let them sit on the baking sheet for a few more minutes before transferring them to a cooling rack.
