Cabbage Salad with Fresh Herbs and Peanuts

  • 4 cups shredded Napa cabbage
  • 4 cups shredded kale (or more Napa cabbage)
  • 4 scallions, thinly sliced
  • 1 large carrot, shredded (shredded apple is good too)
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped fresh mint
  • ¼ cup chopped fresh basil
  • ⅔ cup chopped roasted peanuts
  • ¼ cup toasted sesame seeds

  • Dressing
    • 1/4 cup olive oil
    • 2 tablespoons unseasoned rice vinegar
    • 2 tablespoons soy sauce
    • 1 tablespoon honey
    • 1 tablespoon Dijon mustard
    • 1/2 tablespoon toasted sesame oil
    • 2 cloves garlic, finely minced

Mix all ingredients for the salad. Toss with the dressing, It tastes best if it can sit for a few minutes.
