- 1 leg of lamb
- Garlic cloves
- Kosher Salt and pepper
- Allspice
- Roasting potatoes, cut into 2.5-inch cubes
- Olive oil
- Set rack in center of oven and pre-heat to 450-F (the oven will later reduce to 350-F ).
- Cut potatoes into large cubes, approximately 2.5 inches. Place in a bowl and toss to coat with olive oil, salt and pepper.
- Trim the lamb of excess fat and pat dry with a paper towel.
- Thinly slice garlic cloves. Cut small slits all over the lamb insert garlic slices. Sprinkle lamb generously with salt and pepper. Lightly dust with allspice.
- Place lamb on roasting pan. Surround the lamb with the cubes of potatoes.
- Bake for 20 minutes at 450-F. Then, reduce the oven to 350-F and continue cooking about 25 minutes per pound or until internal temperature registers 135°F to 140°F.
