Apple Cobbler

For The Filling:

  • 4 tablespoons butter
  • 4 apples (Honeycrisp or Gala preferred)
  • 1/4 cup light brown sugar
  • 1/2 cup orange juice (I use 1/4 cup)
  • 1/2 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice (I use 1/2 teaspoon)
  • Vanilla ice cream, for serving

For the topping:

  • 3/4 cup all purpose flour
  • 1/2 cup granulated sugar
  • 1½ teaspoon baking powder
  • pinch of salt
  • 1/2 cup milk (I use buttermilk)
  • 4 tablespoons butter
  • 1 teaspoon orange zest

Preheat the oven to 350°F.

 Peel, core, and cut the apples into 1/4-inch slices (I chop mine smaller).

In a large pan, over medium heat, melt butter.

Add apples, brown sugar, and spices, and cornstarch. Cook for 2-3 minutes, stirring occasionally.

Pour in the juice and mix. Bring to a boil, reduce and cook for 1 minute.

Meanwhile, In a medium bowl, mix flour, sugar, baking powder, and salt.

Add milk, melted butter, and vanilla extract to the dry ingredients. Mix until just combined.

Pour the batter over the apple mixture and spread roughly.

Bake for 35-40 minutes until golden brown.

Allow to cool 15-20 minutes.
