Crispy Rice Salad Topper

For 3 cups cooked rice

1.5 tbsp neutral oil

1 tsp salt

1 tsp sugar

1–2 tsp soy sauce or fish sauce

Optional: chili oil

Pre-heat oven 400°F.

Spread rice evenly on parchment lined baking sheet.

Bake 30 minutes, stirring once halfway through.

Turn the broiler on and broil for 1-2 minutes, until deeply browned.

Turn off the oven and crack the door. Allow to cool for a few minutes.
