Makes 2 servings
- 2/3 cup rolled oats
- 1 large banana
- 2 eggs
- 1/2 cup milk
- 1/4 cup chocolate chips (optional, but adds sweetness)
- 2 tablespoons cacao powder
- 2 tablespoons melted butter
- 2 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Milk, for serving
- Optional mix-ins:
- 1 tablespoon chia seeds
- 1/4 cup nuts
- 1-2 tablespoons nut butter
- 1 scoop protein powder
- Pre-heat oven to 350-F.
- Add all ingredients (except nuts or chocolate chips) to the cup of a blender. Blend until well combined.
- Pour into a buttered, 1.5 quart baking dish. Bake for 25-30 minutes, or until set in the middle (it will still jiggle).
- Serve warm with cold milk poured on top.
