Banana Chocolate Baked Oats


Makes 2 servings

  • 2/3 cup rolled oats
  • 1 large banana
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup chocolate chips (optional, but adds sweetness)
  • 2 tablespoons cacao powder
  • 2 tablespoons melted butter
  • 2 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Milk, for serving
  • Optional mix-ins:
    • 1 tablespoon chia seeds
    • 1/4 cup nuts
    • 1-2 tablespoons nut butter
    • 1 scoop protein powder

  1. Pre-heat oven to 350-F.
  2. Add all ingredients (except nuts or chocolate chips) to the cup of a blender. Blend until well combined.
  3. Pour into a buttered, 1.5 quart baking dish. Bake for 25-30 minutes, or until set in the middle (it will still jiggle).
  4. Serve warm with cold milk poured on top.
