Apple Streusel Pumpkin Muffins

Serves: 18 muffins

Ingredients

  • 2.5 cups all purpose flour
  • 2 sugar (I will reduce this to 1 cup)
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 cups peeled, cored and chopped apples
  • Topping
  • 2 tablespoons flour
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 1.5 tablespoons butter, softened

Instructions

Preheat oven to 350-F. (Muffins bake best at temperatures between 375-425)

Lightly grease 18 muffin cups or line muffin cups with paper liners.

Into a large bowl, combine lightly beaten eggs, pumpkin puree and vegetable oil.

Place a sifter/fine mesh sieve over the bowl and add 2.5 cups flour, 2 cups sugar, pumpkin pie spice, baking soda, and salt. Sift these dry ingredients into the bowl and mix until just combined.

Fold in chopped apples.

Spoon batter into prepared muffin cups.

Topping:

In a small bowl, combine 2 tablespoons flour, 1/4 cup sugar and cinnamon.

Cut in butter until mixture resembles coarse crumbs.

Sprinkle topping evenly over muffin batter in cups.

Bake in oven for 35 to 40 minutes or until a toothpick inserted in center of muffins comes out clean.

Remove from oven and cool on a wire rack.
