- 3 cups mashed potatoes (made from instructions on the box for 6 servings of Potato Buds) plus a bit extra *(see note)
- 1 package cream cheese, softened
- 1 stick butter, softened
- 2 eggs
- 4 tablespoons flour
- 1/2 tsp salt and pepper to taste
- 1 container French fried onions
- Pre-heat oven to 350-F.
- Follow package directions to make 6 servings of Potato Buds – which results in 3 cups mashed potatoes – *and then add extra potato buds flakes to make the potatoes drier than you would normally serve (about 1/2 cup more than the directions call for).
- Mix prepared mashed potatoes with cream cheese, butter, eggs, flour, salt, and pepper in mixer until well blended.
- Place in a medium-sized casserole. Top with French fried onions.
- Bake uncovered for about 35 minutes or until a little color is added to the top.
