- 1/2 cup (129g) mashed cooked sweet potato (from about 1 sweet potato)
- 1/2 cup (119g) low fat cottage cheese
- 2 large eggs
- 1 tablespoon pure maple syrup (I skip this)
- 1 teaspoon vanilla extract
- 1 cup old fashioned rolled oats
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon salt
- Preheat waffle iron.
- Place all ingredients in a high powered blender and blend until batter is smooth (batter will be thick).
- Spray waffle iron with nonstick cooking spray and cook about 2-3 minutes.
- Makes 2 large waffles.
- Allow to cool and spread with peanut butter and Nutella.
