Greek Yogurt Sorghum Pancakes (GF)

  • 1 cup Greek yogurt
  • 2 large eggs
  • 1 cup sorghum flour
  • 1/2 cup buttermilk
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

  1. Mix all ingredients in a bowl.
  2. Heat butter and oil together over medium heat. Add 1/4 cup batter and cook until browned. Flip and repeat.
