Whole Grain Pumpkin Muffins (low-fat/low sugar)

This is adapted from the Pumpkin Bread recipe. It has low sugar and low fat.
  • 1 cup (260g) canned pumpkin
  • 1/2 cup (238g) water or milk
  • 1/4 cup olive oil
  • 2 large eggs
  • 1/4 cup granulated sugar (results in lightly sweetened muffins. Add additional 1/4 cup if want sweeter)
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 cups whole wheat flour

  1. Set an oven rack in the center of the oven and preheat to 375-F.
  2. Place muffin liners into muffin pan.
  3. Whisk together all ingredients except flour.
  4. Mix in flour until just combined.
  5. Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean, or with a few moist crumbs attached.
