Healthy Banana Chocolate Muffins

  • 3 medium ripe bananas, mashed
  • 1/4 cup brown sugar or maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup plain or vanilla 2% or whole-milk greek yogurt
  • 1 cup whole wheat pastry flour or white whole wheat flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1/2 cup chocolate chips, plus 2 tablespoons for sprinkling on top

  • Preheat oven to 350-F. Line a 12 cup muffin tin with muffin liners.
  • In a large bowl add the mashed bananas, sugar, vanilla, egg, oil and greek yogurt. Whisk wet ingredients together until well combined.
  • Add the rest of the ingredients and mix well.
  • Pour every into muffin cups. Sprinkle the remaining 2 tablespoons of chocolate chips on top of muffins.
  • Bake for 23-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
