Mom’s Roasted Boneless Leg of Lamb


  • 1 leg of lamb
  • Garlic cloves 
  • Kosher Salt and pepper
  • Allspice 
  • Roasting potatoes, cut into 2.5-inch cubes
  • Olive oil

  1. Set rack in center of oven and pre-heat to 450-F (the oven will later reduce to 350-F ).
  2. Cut potatoes into large cubes, approximately 2.5 inches. Place in a bowl and toss to coat with olive oil, salt and pepper.
  3. Trim the lamb of excess fat and pat dry with a paper towel. 
  4. Thinly slice garlic cloves. Cut small slits all over the lamb insert garlic slices. Sprinkle lamb generously with salt and pepper. Lightly dust with allspice.
  5. Place lamb on roasting pan. Surround the lamb with the cubes of potatoes. 
  6. Bake for 20 minutes at 450-F. Then, reduce the oven to 350-F and continue cooking about 25 minutes per pound or until internal temperature registers 135°F to 140°F.
