[updated] Romaine and Tomato Salad with Lemon Allspice Dressing

  • 1 small/medium head (about 20 oz) romaine lettuce, torn into bite sized pieces
  • 4 Kumato tomatoes from trader joe’s (or 3-4 medium sized tomatoes), sliced in thin wedges
  • 2 1/2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1/4 – 3/4 teaspoon allspice
  • 1/4-1/2 teaspoon kosher salt

Whisk ingredients for dressing in the bottom of a large salad bowl until fully combined.
Add the tomatoes to the bowl and toss to coat. Let them sit for a few minutes so the salt can draw out some moisture from the tomatoes. This juice is an integral part of the dressing.

Meanwhile, wash, dry, and chop the romaine lettuce into bite-sized pieces.

Add the romaine to the bowl and toss everything together until evenly coated in the dressing.
