Stir-Fried Baby Bok Choy

  • 2 lbs baby bok choy, halved, about 6
  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 2 garlic cloves, roughly chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons water
  • Salt, pepper, crushed red pepper flakes, to taste
  • 1 tablespoon toasted sesame seeds, for serving

  1. Cut bok choy in half and then clean under running water; pat dry with paper towels.
  2. Heat oil in a large skillet. Place as many bok choy halves , cut side down, that will fit.
  3. Cook until lightly browned. Remove from pan and repeat with remaining bok choy.
  4. Return all the bok choy to the pan, along with the rest of the ingredients. Bring to a simmer, stirring bok choy until well-coated.
  5. Cook for another 2 minutes and remove from heat.
  6. Sprinkle with sesame seeds.
