Sourdough Banana Bread

Sourdough Chocolate Chip Banana Bread

Ingredients

  • 100 g sugar (1/2 cup)
  • 40 g brown sugar (3.5 tablespoons)
  • 100 g sunflower oil or other neutral oil (1/2 cup)
  • 2 eggs
  • 80 grams sourdough discard 100% hydration (or sub with buttermilk)
  • 3 overripe bananas, mashed
  • 60 g toasted walnuts, chopped (heaped 1/2 cup)
  • 1 teaspoon vanilla extract
  • 1 1/4 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 100 grams blueberries or semi-sweet chocolate chips (heaping 1/2 cup)
  • 150 grams all-purpose flour (1 cup)
  • 150 grams whole wheat pastry flour (1 cup)

Instructions

Set oven rack to middle position. Pre-heat oven to 360-F. Grease a loaf pan with butter or cooking spray.

In a large bowl, mix together all ingredients, except blueberries, all-purpose flour, and whole wheat pastry flour.

Fold in blueberries, all-purpose flour, and whole wheat pastry flour until just combined.

Pour into loaf pan.

Bake for 43-50 minutes (22-25 minutes for muffins) or until a toothpick inserted into the center comes out clean or with a few crumbs attached. If using a thermometer, the center of the loaf should reach 200-205 when done.

Set the loaf pan on a cooling rack and cool for 10 minutes. Then, remove from the pan and continue cooling an additional 10 minutes.
