Simple Perfect Vinaigrette

  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar or lemon juice (or one of each)
  • 1/2 tablespoon dijon mustard
  • 1/4 teaspoon salt
  • Freshly cracked pepper, to taste
  • Optional:
    • 1 teaspoon maple syrup or honey
    • 1 clove garlic (if using garlic, omit maple syrup or honey
    • 2 tablespoons grated Parmesan
