- 1/3 cup *granulated sugar
- 1/3 cup unsweetened cocoa powder
- 4 tablespoons cornstarch (or use egg yolks: 2 egg yolk is equivalent to 1 tablespoon of cornstarch)
- 1/4 teaspoon kosher salt
- 3 cups milk (I use 2%)
- 1 teaspoon vanilla
*To lower sugar content, reduce sugar and cocoa powder to 1/4 cup each. The rest of the ingredients remain the same.
- Mix together sugar, cocoa powder, cornstarch, and salt. Place in a saucepan.
- Whisk in the milk, a little at a time, until it is well incorporated.
- Mix in any yolks, if using.
- Turn on the heat to medium; cook, stirring often, until the mixture reaches a boil; remove from heat.
- Stir in vanilla.
- Serve warm or allow to cool.
- Refrigerate to cool completely.
