- 1/3 cup granulated sugar
- 1 egg yolk
- 1/3 cup unsweetened cocoa powder
- 1/3 cup *cornstarch
- 1/4 teaspoon kosher salt
- 3 cups milk (I use lactose free 2%)
- 1 teaspoon vanilla
- 1 tablespoon butter (optional)
*or use egg yolks: 2 egg yolk is equivalent to 1 tablespoon of cornstarch
- In a saucepan, whisk together sugar, egg yolk, cocoa powder, cornstarch, and salt.
- Turn the heat onto medium. Whisk in the milk, a little at a time, until it is well incorporated; cook, stirring often, until the mixture reaches a boil; remove from heat.
- Stir in vanilla.
- Stir in butter.
- Serve warm or allow to cool.
- Refrigerate to cool completely.
