Simple Chocolate Pudding


  • 1/3 cup granulated sugar
  • 1 egg yolk
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup *cornstarch
  • 1/4 teaspoon kosher salt
  • 3 cups milk (I use lactose free 2%)
  • 1 teaspoon vanilla
  • 1 tablespoon butter (optional)

*or use egg yolks: 2 egg yolk is equivalent to 1 tablespoon of cornstarch


  1. In a saucepan, whisk together sugar, egg yolk, cocoa powder, cornstarch, and salt.
  2. Turn the heat onto medium. Whisk in the milk, a little at a time, until it is well incorporated; cook, stirring often, until the mixture reaches a boil; remove from heat.
  3. Stir in vanilla.
  4. Stir in butter.
  5. Serve warm or allow to cool.
  6. Refrigerate to cool completely.
