Salad dressing adapted from Silver Palate Cookbook
- 1 head red leaf lettuce, chopped
- 1/8 red onion, sliced
- 1/4 cup dried currants or dried blueberries
- 1/4 cup sliced, roasted  almonds
- 1/2 avocado, cubed
- 3 tablespoons Point Reyes blue cheese,  crumbled 
- Dressing:
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon dijon mustard 
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked pepper
- In a large salad bowl, add all ingredients for salad dressing and whisk to combine (I also like to add a bit of blue cheese to the dressing). 
- Add all ingredients for the salad, and toss well.
