Red Leaf Lettuce with Blue Cheese and Currants


Salad dressing adapted from Silver Palate Cookbook


  • 1 head red leaf lettuce, chopped
  • 1/8 red onion, sliced
  • 1/4 cup dried currants or dried blueberries
  • 1/4 cup sliced, roasted almonds
  • 1/2 avocado, cubed
  • 3 tablespoons Point Reyes blue cheese, crumbled
  • Dressing:
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked pepper

  1. In a large salad bowl, add all ingredients for salad dressing and whisk to combine (I also like to add a bit of blue cheese to the dressing).
  2. Add all ingredients for the salad, and toss well.
